“I’m such a massive fan of soup all year round, I think this is great for the summer with citrus and lots of herbs. The tohu was soooo good in this crumb too. It’s a perfect hormone balancing soup with lots of brasiccas rich in glucosinolates, beneficial for cancer prevention. And then the chickpea in the tohu for the phytoestrogens, plant protein and fibre.”

everything you need
For the soup:
1 small head of broccoli, roughly chopped
small bunch of kale, chopped
2 massive handfuls of spinach
2cm ginger, chopped
2 garlic cloves, roughly chopped
1 stock cube
a handful of cashews
juice of 1/2 lemon
For the Crispy Tohu Croutons:
1 block FuFighters chickpea tohu
3tbsp Tamari (optional)
2tsbs group almonds
1 tsp smoked paprika
pinch of sea salt
Toasted mixed seeds as an additional topping. (optional)
Step 1
Chop your block of Tohu into cubes. Add to a bowl with 3tbsp tamari (omit this step if you are avoiding soy).
Allow to marinade for 30 minutes while you chop the veg and begin cooking the soup.
